Description
The richness and elegance of a Burgundy Pinot Noir
The estate
Founded in 1130 by the Cistercian monks of the Abbey of La Ferté in Givry, the Domaine du Cellier aux Moines is one of the oldest wine estates in Burgundy. In 2004, it was taken over by Philippe and Catherine Pascal and their three children, all driven by the same objective: to bring the estate back to life. Listed as a Monument Historique, the Cellier aux Moines has been restored over the last ten years with passion and the greatest respect for tradition. This veritable jewel of Burgundy winegrowing now extends over more than 10 hectares, bringing together exceptional Premier Crus from Givry to Puligny-Montrachet.
The vineyard
This Givry Village comes from a forgotten monopole, a 27-acre Clos located within the historic walls of the Cellier aux Moines. Neglected following the phylloxera crisis, it was replanted by the Pascal family using a rigorous selection of Pinot Noirs. Facing due south, the vines are grown on clay-limestone and shallow stony soils. Grown around stakes, the vines are never pruned and produce only five bunches per vine, giving concentrated berries.
