The property
Although the history of the Bichot family goes back to 1214, it was in 1350 that it was established in Burgundy. The trading house was created in Monthélie in 1831, under the impetus of Bernard Bichot, and grew rapidly during the 19th century, becoming the official supplier to the Swedish Court. An independent, family-run business, Albert Bichot is one of those great names that have left their mark on the wine industry and the influence of Burgundy wines. Today, the 6th generation has been running the company since 1996, harmoniously blending modernity with family tradition.
Today, Albert Bichot owns more than 100 hectares of vineyards, spread from the north to the south of Burgundy and grouped into 6 prestigious estates: Domaine Long-Depaquit, located in Chablis, in the Yonne, Domaine du Clos-Frantin and Château Gris, both located in Nuits-Saint-Georges and Domaine du Pavillon, in Pommard. Devoted to Mercurey wines, it was in 2013 that Domaine Adélie was bought by Albert Bichot. The estate is named after the first name of Albert Bichot's daughter, who was born in 2003, thus carrying forward the family legacy from generation to generation. The beautiful vineyard of Domaine de Rochegrès in the Moulin À Vent appellation joined the family business in 2014.
The vineyard
Situated on the left bank of the Serein, Les Vaillons is today a reference among the wines of Chablis. The vineyard extends across 4.8 hectares, with vines that are on average 36 years old. The site is distinguished by a reddish soil is clay-limestone, on sedimentary geological layers of the upper Jurassic era.
Winemaking and ageing
Gentle extraction of the must by pneumatic presses, then cold settling. 90% of the wine is vinified in vats and 10% in barrels of 1 to 4 wines. Aged on the lees in vats and in rooms, with stirring to develop the aromatic complexity.
