Description
Characteristics and Tasting Tips for the Pommard Village "Vieilles Vignes" 2023 from Domaine Fabien Coche
Tasting
Colour
The wine shows a deep ruby hue shading into garnet, clear and brilliant, a sign of fine phenolic ripeness and careful vinification.
Nose
The nose opens with a bouquet of ripe red fruits, led by cherry and plum, lifted by delicate floral notes. Touches of undergrowth and sweet spices add complexity, while a mineral, almost ferrous dimension recalls the identity of the Pommard terroir.
Palate
The palate reveals a dense yet refined texture, carried by fine, precise tannins. Freshness remains very much present, balancing the concentration of the fruit, with a long finish of spicy, mineral notes that prolong the tasting experience.
Food and Wine Pairings
This Pommard naturally finds its place alongside roasted or grilled red meats, as well as slow-cooked dishes in sauce, such as a bœuf bourguignon. It also pairs well with roast poultry served with mushrooms, or with hard cooked-pressed cheeses such as aged Comté.
Serving and Cellaring
The Pommard Village "Vieilles Vignes" 2023 is ideally served between 16 and 18°C. When young, decanting will allow the wine to open up fully and reveal the full richness of its bouquet. Its fine tannic structure and freshness give it good ageing potential in the cellar.
A Dense, Mineral Pommard from Domaine Fabien Coche
The Estate
Founded in 1940 in Meursault under the name Coche-Bizouard, Domaine Fabien Coche is now run by Fabien Coche and his wife Magali. Located in the heart of Burgundy, on the Côte de Beaune, the estate cultivates around 12 hectares of vines spread across Meursault, Pommard and several neighbouring villages. Long committed to environmentally friendly viticulture, the estate extended organic management across its vineyard from the 2017 vintage onwards and obtained certification in 2023.
The Vineyard
This Pommard comes from old Pinot Noir vines located on several plots within the appellation, including climats classified as Premier Cru and lieux-dits within the village appellation. The soils, predominantly limestone and marl, with some more alluvial and shallow areas, give the wine its structure, depth and a characteristic mineral framework. The entire vineyard is managed according to the principles of organic farming.
The Vintage
The 2023 vintage stands out for its freshness and finesse, qualities found across all of the estate's wines that year. This freshness, combined with a beautiful density of fruit, delivers a remarkable balance between power and elegance.
Vinification and Ageing
For the production of the Pommard Village "Vieilles Vignes" 2023, a portion of the harvest is vinified as whole bunches, with a gentle extraction that favours fine, precise tannins. The wine is then aged in oak barrels, including a proportion of new wood from carefully selected cooperages, adding structure and complexity without masking the fruit.
Grape Variety
This wine is made from Pinot Noir.
