Description
Characteristics and Tasting Tips for the Dom Pérignon Vintage 2018
Tasting
Colour
The colour is a bright, luminous straw yellow, enhanced by subtle golden highlights. The effervescence is distinguished by a fine, persistent mousse, which underscores the freshness of the wine from the very first glance.
Nose
The nose opens with notes of candied citrus, lemon zest and lime, before unveiling a floral bouquet of jasmine, peony and linden blossom. Hints of ripe fruit, golden kiwi, mango and quince, mingle with touches of cardamom, white pepper and balsamic herbs. With aeration, toasty notes of praline, caramelised almonds and dark chocolate complete this aromatic palette, supported by a chalky minerality reminiscent of graphite.
Palate
The attack is ample and enveloping, carried by a creamy, silky texture that gradually lightens. Flavours of citrus and ripe fruit combine with vibrant acidity and pronounced salinity, creating a palate that is both generous and taut. The slightly smoky finish stands out for its remarkable length, which continues to unfold without interruption.
Food and Wine Pairings
This champagne is an ideal match for a refined aperitif, as well as for seafood such as lobster or scallops. It also pairs very well with delicately prepared veal dishes.
Serving and Cellaring
The Dom Pérignon Vintage 2018 should be served chilled, between 6 and 8°C, in order to preserve its mineral precision and the finesse of its effervescence.
A Dom Pérignon Champagne Marked by the Minerality and Salinity of the 2018 Vintage
The Estate
Founded in the 20th century, the Dom Pérignon cuvée saw its first vintage in 1921, released in 1936 as the prestige wine of the House of Moët & Chandon. Based in Épernay, in Champagne, the House now belongs to the LVMH group, within Moët Hennessy, and is led by Sybille Scherer. Dom Pérignon is distinguished by its exclusively vintage production, made from Grand Cru-classified grapes and entrusted to cellar master Vincent Chaperon, as well as by its historic roots in the Abbey of Hautvillers, the cradle of Champagne.
The Vintage
The 2018 harvest in Champagne stands out for the particularly accomplished ripeness of its grapes, combined with excellent sanitary condition. It thus provides a raw material well suited to crafting champagnes that are generous, structured and carried by a beautiful aromatic intensity.
Vinification and Ageing
The Dom Pérignon Vintage 2018 is crafted using the traditional Champagne method, with a second fermentation in bottle followed by a long ageing on the lees, in the darkness of the cellars. This maturation period allows the wine to reveal its precision, intensity and minerality, while developing the creamy texture characteristic of the House.
Grape Varieties
This champagne is made from a blend of Chardonnay and Pinot Noir, the two principal grape varieties of Champagne, the exact proportions of which are not specified.
