Chablis Grand Cru Vaudésir: Between Richness and Mineral Tension
The Estate
Founded in 1959 by Bernard Defaix on two hectares, Domaine Bernard Defaix has grown in the heart of the Chablis vineyard, in Burgundy, in Milly. It is now run by his sons Didier and Sylvain, who are respectively in charge of the vineyard and the cellar, alongside Hélène for the commercial side. The estate now extends over a larger vineyard and follows an organic approach, extended to the winery since the 2012 vintage, cultivating in particular the Grand Cru climats Bougros and Vaudésir.
The Vineyard
This Chablis Grand Cru Vaudésir comes from the Vaudésir climat, located between Valmur and Preuses, close to Grenouilles. This terroir is distinguished by steep slopes and soils that are lighter and less chalky than the average of the other Grand Cru sites of Chablis. The vineyard is farmed organically, with soil work carried out exclusively by ploughing, complemented by earthing up and unearthing practices, as well as crop protection limited to sulphur and copper.
Vinification and Ageing
This Chablis Grand Cru "Vaudésir" 2024 is vinified and aged in oak barrels on fine lees, with regular lees stirring intended to add texture and depth. Ageing continues for several months before a light filtration prior to bottling. Vinification relies on indigenous yeasts and slow pressing, in accordance with the specifications of organic farming extended to the winery.
Grape Variety
This wine is made from 100% Chardonnay.
